Energy Balls

Perfectly bite-sized and packed with protein, fiber, and healthy fats—these little powerhouses are great for an energy boost anytime!

Ingredients

  • 1 cup rolled oats (GF, if desired)

  • 1/2 cup nut butter (such as almond butter or peanut butter)

  • 1/4 cup honey or maple syrup

  • 1/4 cup ground flaxseed

  • 1/4 cup mini chocolate chips or dried fruit (optional)

  • 1 teaspoon vanilla extract

Instructions

  1. Mix rolled oats, nut butter, honey/maple syrup, ground flaxseed, optional chocolate chips/fruit and vanilla extract in a bowl.

  2. Adjust the consistency if needed by adding more nut butter or sweetener.

  3. Roll the mixture into bite-sized balls (may need to put in the fridge for 15 mins to harden enough to roll the balls)

  4. Store in an airtight container in the fridge for up to a week, or freeze for easy snacks later.
