Energy Balls
Perfectly bite-sized and packed with protein, fiber, and healthy fats—these little powerhouses are great for an energy boost anytime!
Ingredients
1 cup rolled oats (GF, if desired)
1/2 cup nut butter (such as almond butter or peanut butter)
1/4 cup honey or maple syrup
1/4 cup ground flaxseed
1/4 cup mini chocolate chips or dried fruit (optional)
1 teaspoon vanilla extract
Instructions
Mix rolled oats, nut butter, honey/maple syrup, ground flaxseed, optional chocolate chips/fruit and vanilla extract in a bowl.
Adjust the consistency if needed by adding more nut butter or sweetener.
Roll the mixture into bite-sized balls (may need to put in the fridge for 15 mins to harden enough to roll the balls)
Store in an airtight container in the fridge for up to a week, or freeze for easy snacks later.
