The BEST GF/DF Banana Bread

I’m sharing a cozy new recipe with you this week: The BEST Banana Bread. It’s gluten-free, dairy-free, and absolutely delicious. Early in my healing journey, I had more food restrictions than I do now, and this banana bread became a staple that I still love to this day. It’s simple, comforting, and family-approved—I think you’ll love it!

Ingredients

  • 4 ripe bananas

  • 4 eggs

  • 1/2 cup peanut butter

  • 1/3 cup maple syrup

  • 1.5 TBSP coconut oil (melted)

  • 1.5 tsp vanilla

  • 2 tsp cinnamon

  • 1.5 tsp baking powder

  • 1.5 tsp baking soda

  • 1/4 tsp salt

  • 2.5 cups almond flour

  • 0.5 cup all purpose GF flour (King Arthur)

Instructions

  1. In a small bowl, peel and mash the bananas with a fork

  2. In a large bowl, mix all other ingredients

  3. Add bananas to the large bowl and stir well together

  4. Line 2 loaf pans with parchment paper.

  5. Add the batter to the pans and top with optional toppings (chocolate chips, nuts, etc)

  6. Bake at 350 degrees for 30-35 minutes
