The BEST GF/DF Banana Bread
I’m sharing a cozy new recipe with you this week: The BEST Banana Bread. It’s gluten-free, dairy-free, and absolutely delicious. Early in my healing journey, I had more food restrictions than I do now, and this banana bread became a staple that I still love to this day. It’s simple, comforting, and family-approved—I think you’ll love it!
Ingredients
4 ripe bananas
4 eggs
1/2 cup peanut butter
1/3 cup maple syrup
1.5 TBSP coconut oil (melted)
1.5 tsp vanilla
2 tsp cinnamon
1.5 tsp baking powder
1.5 tsp baking soda
1/4 tsp salt
2.5 cups almond flour
0.5 cup all purpose GF flour (King Arthur)
Instructions
In a small bowl, peel and mash the bananas with a fork
In a large bowl, mix all other ingredients
Add bananas to the large bowl and stir well together
Line 2 loaf pans with parchment paper.
Add the batter to the pans and top with optional toppings (chocolate chips, nuts, etc)
Bake at 350 degrees for 30-35 minutes
