Greek Chicken Bowls
Our family loves build-your-own bowls—especially this Greek Chicken Bowl, the one we’ve been known to eat in the car on the go. Customizable, tasty, and basically meal prep disguised as a dinner dash!
Ingredients:
Crockpot: 1.5-2 lbs chicken breast, 1/2 cup chicken broth, 1/3 cup EVOO, 1/4 cup red wine vinegar, 1 TBSP dijon mustard, 1/2 tsp oregano, 1/2 tsp salt, 1/2 tsp pepper, 1 TBSP garlic powder
Bowl: lettuce, carrots, olives, cucumber, cheese (feta or parmesan romano)
Dressing: Red wine vinegar, EVOO, salt, pepper, oregano
Optional: side of hummus
Instructions:
Put all crockpot ingredients in the crockpot and cook on low for 6-8 hours
Once cooked, shred the chicken
Place all bowl ingredients to a large salad bowl and add shredded chicken
Add red wine vinegar, extra virgin olive oil, salt, pepper and oregano to taste for the dressing. Option to add hummus to the bowl as well.
Options:
Instead of making shredded chicken in the crockpot, you can chop the chicken into bite size pieces and cook it in the air fryer with some Cavenders greek seasoning.
OR, sauté ground chicken on the stovetop with Cavenders greek seasoning.
