Serves: 6–8
Prep Time: 10 minutes
Cook Time: 6–7 hours

Ingredients

  • 4–5 lb beef chuck roast

  • 1 packet onion soup mix

  • 1 large onion, chopped

  • 2 Tbsp garlic (minced)

  • Butter (for searing the roast)

  • 1 cup beef bone broth (more if needed to cover the bottom of the pot)

  • Salt + black pepper

  • 1 can organic cranberry sauce

  • 4–6 sprigs fresh rosemary

  • 6 Tbsp butter (cut into chunks)

Instructions

  1. Sear the roast:
In a hot skillet, melt a bit of butter and sear the chuck roast on all sides until the edges are browned and crispy. This step adds incredible flavor — don’t skip it!

  2. Layer the crockpot:
Add chopped onion, garlic, and bone broth to the bottom of the crockpot.

  3. Place the roast:
Transfer the seared roast on top of the aromatics.

  4. Season:
Sprinkle onion soup mix, salt, and pepper (to taste) directly over the roast.

  5. Add the festive touch:
Spoon cranberry sauce over the top, then scatter butter chunks and place rosemary sprigs around the roast.

  6. Slow cook:
Cook on LOW for 6–7 hours, or until the meat is fall-apart tender.

  7. Serve:
Shred or slice and plate with the pan juices. Enjoy with toasty bread and a simple tossed salad for a complete, cozy meal.
